I can't afford meat but I have kidney beans, tomatoes & chili powder--how do I make chili from these?

Do you have any other veggies or anything in the house? The recipe below is good and you can use it as a cooking guideline if you don't have all of the other ingredients.





Vegetarian Chili~





INGREDIENTS


1 tablespoon vegetable oil


1 cup chopped onions


3/4 cup chopped carrots


3 cloves garlic, minced


1 cup chopped green bell pepper


1 cup chopped red bell pepper


3/4 cup chopped celery


1 tablespoon chili powder


1 1/2 cups chopped fresh mushrooms


1 (28 ounce) can whole peeled tomatoes with liquid, chopped


1 (19 ounce) can kidney beans with liquid


1 (11 ounce) can whole kernel corn, undrained


1 tablespoon ground cumin


1 1/2 teaspoons dried oregano


1 1/2 teaspoons dried basil





DIRECTIONS


Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.


Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Are the beans canned or dry? If dry, you will need to soak them according to the directions to use them to make chili. If canned, you can just drain them. I make a vege version of chile lots of the time, but I generally use a chili mix. Just find a recipe (food tv or allrecipes.com) and substitute the beans for meat. You can use masa flour as a thickening agent if you like thicker chili.
Do it the same way you would if you had meat.





If you have any beef broth, beef base, or beef bullion, you might want to add some to give it a beefy flavor.

You can't afford meat today... or ever? If you prefer the Chili w/ meat, I would wait until you could buy a pound of ground beef for 2.99 and then make it w/ the meat.





You can afford the internet? Just asking?
You can buy a pound of ground beef for $2-3. But if you choose not to then saute some diced onion and green pepper. Add rinsed and drained beans, diced tomatoes and their juice, and chili powder, cumin, oregano, salt and pepper. Flavor with some beef broth or just dilute with water if needed. Simmer low for 3-4 hours.
Buy it?...just stop pick it up..roadkill...yum

why dont u try soya? Its not the same as meat, but well cooked u will like it.
